Pumpkin Apple Oatmeal Breakfast Recipe

Ingredients:
- ½ cup rolled oats
- ½ cup canned pumpkin
- 1 apple, sliced and cored (I like Honeycrisp, but any will do)
- 1 cup vanilla flavored unsweetened plant-based milk
- Cinnamon
- Optional Toppings: Nuts or shredded coconut
Directions:
- Bring apples and milk to a slow boil
- Add oats and cook for about 2 minutes
- Add the canned pumpkin, cook another minute
- Season with cinnamon, nutmeg
- Top with walnuts, almonds, pecans, and shredded coconut if desired.
