Pumpkin Apple Oatmeal Recipe

Prep Time: 10-15 minutes

Cook Time: 3 minutes

Servings: 1

Ingredients:

  • ½ cup rolled oats
  • ½ cup canned pumpkin
  • 1 apple, sliced and cored (I like Honeycrisp, but any will do)
  • 1 cup vanilla flavored unsweetened plant-based milk
  • Cinnamon
  • Optional Toppings: Nuts or shredded coconut

Directions:

  1. Bring apples and milk to a slow boil
  2. Add oats and cook for about 2 minutes
  3. Add the canned pumpkin, cook another minute
  4. Season with cinnamon, nutmeg
  5. Top with walnuts, almonds, pecans, and shredded coconut if desired.
